I've always loved Hojicha. The little bit of bitterness in the whipped cream balances really well with the caramelised pears so the overall cake doesn't taste that sweet. The sponge cake is also light and fluffy. We bought this cake for friends' birthdays and have to say it looks absolutely gorgeous too! Definitely keen to try other flavours next time.
