I bought the 6inch pistachio and raspberry cake for my MIL's birthday and it went down a treat!
The 6 inch divided perfectly between eight people but there were no leftovers, so if you want seconds I would suggest getting the larger size.
The flavour was lovely and not too sweet. The adults loved it but the kids didn't like it as much, I guess because there is the distinct nutty flavour of pistachio.
My MIL loved it, so it's perfect for adults but I would consider getting a sweeter/fruity flavour if you're catering to children.
I am still daydreaming about this cake from the weekend. From the flavour profile to the texture and aesthetic, everything was perfect. We all loved the cake and can't wait to reorder!
This is the cake for those of you (like us) who love all things pistachio! The cream is nutty without being overpowering. The nuts on the side of the cake provide that lovely texture so it's not all smooth eating. The raspberries give you a break from the sweetness (but it's not overly sweet) with a smack of fresh tang. The look of the cake is fantastic with a pink inner bound by a green outer decorated with raspberries exuding freshness. The chiffon inside is light and fluffy and brings together the flavours into a light deliciousness. Not too heavy and not too rich. Simply Perfection.
The pistachio cream and raspberry compote are the perfect match, all layered on a light, fluffy chiffon sponge. We had this in the office after a heavy lunch and it was still gone in minutes!
Absolutely delicious! Magical combination of daughter’s favourite flavours of pistachios and raspberry. First time she’s asking for more cake the next day as well.
