Converted sponge cake lover

I grew up with continental sponge cakes and hated them back then, so avoided any sponge cakes in adult life. I bought this Raspberry and Pistachio cake and I can happily say I am converted, but only to Enze’s sponge. It’s light and fluffy and the cream is equally the same. Beautiful flavours that are not rich or overpowering. I could easily eat half a cake on my own 😎

The overall look of the pistachio and raspberry cake is so fun, really made it feels special. The raspberry puree in the cream on top and in between the layers is really flavourful and well-made. My parents said we'd love it if there was EVEN less sugar (?!) in the pistachio cream to let the nuttiness really shine but it's a big win as a recipe as it is and we'd get it again
